Encore Restaurant & Lounge – New Season, New Look

Encore Restaurant & Lounge has undergone a variety of changes to welcome the new season.  Along with a facade facelift; a strong and steady stone wall and fresh interior paint colours, some staff changes have also taken place. 


Chef Fausto has returned to Encore, and delivers a reliably tasty breakfast or lunch, from the same great menu.  We can attest, visiting twice a week and occasionally going two days in a row!

Chef Jose Luis, new to Encore, rounds out the day preparing imaginative dinners.   

We were thrilled to receive an invitation from Armi and John to join them for a “tasting” of some dishes Jose Luis was preparing.  Naturally, and quickly, we accepted!

We arrived to the usual friendly welcome and were seated at the next table.  “What have you two been up to?” as we exchanged summer stories.  It was nice to catch up with Armi and John, who have been busy since returning to Bucerias. 

The time between has been good to them both.  Healthy and Happy. 

Armi laughed when she explained the moment felt like an episode of MasterChef as she faced Jose Luis with outstretched arms encompassing a pile of ingredients, and requested he create dishes out of it all.  She was unaware of how the final plates would be prepared. “Today he came in to cook us his own recipes.  He likes to do his magic,” said Armi, as she advised the tasting menu would consist of fish ceviche, salad, chicken, mahi-mahi, and pork. 

We learned we had an important responsibility in our role as “tasters.”  Feedback was expected with each serving

Here’s when the magic began… 

Dish after dish emerged from the kitchen, each one’s preparation described as it was placed before us.  A fiesta for the senses!!

Starting with fish ceviche served on a bed of greens with colourful toppings and tortilla chips for “scooping.” 

Next was a crisp and light salad with strawberries, orange segments, avocado, and a delicate citrus vinaigrette. 

Oh, here comes the fine herb chicken.  So moist.

Now the white wine garlic sauce mahi-mahi. Perfect.

And finally, the fine herb pork chop.  A real treat.


All hot dishes were served on a beautiful base of roasted carrots, zucchini, and sweet peppers.   
 

Our feedback? Probably best summed up by Dennis – “There’s an interesting blend of different seasonings. The flavours are layered to create a distinct taste in each bite.” I simply said, “Wow!”

Lauro and Eric are the mainstays, and you can still count on them to serve your meal and drinks with a friendly smile and efficiency.  Don’t forget about Happy Hour, 1:00pm to 5:00pm, where you’ll choose from a variety of beer and cocktails, even some created by Lauro himself!

Grand Opening

To introduce the “new” Encore, a grand opening celebration is planned for Thursday, November 11th. Enjoy selected dinner entrees and appetizers, with special live music from Armi Grano and an all star jazz band. Music starts at 7:00pm.

This coming season, Encore will be hitting it out of the park with savoury and memorable meals.  Any one of them.  All day long.

Opens for breakfast at 9:00am. Closed Tuesdays. Closed for dinner Sundays. Hours will change as the season progresses.
